Vegetables with Tahini Sauce

This dish proves that tahini doesn’t just belong in hummus. This recipe is not only fun, easy to make and healthy. (I think so – disclaimer) It’s also just very tasty. I regularly make this recipe for my lunch. So that I have a “full” feeling for the rest of the day, and I don’t eat anything in between, I can easily last until dinner.
This recipe is for 1 person.
Ingredients:
- 1.5 potatoes, chopped
- small zucchini, chopped
- kohlrabi cabbage - or turnips (1.5 cups)
- tahini 29 g (5 tsp)
- seed oil 15 g (3 tsp)
- Vegan cheese 58 g
- spices to taste 2g
- garlic 2g
Instructions:
Peel the potatoes, zucchini, and kohlrabi. Cut them into 0.5 cm thick slices
Make the sauce: combine the tahini and mixed garlic in a bowl. Add salt and spices to taste, stir
Place the vegetables in a heated and oiled skillet, cover, and cook over low heat, stirring occasionally, for 15 - 20 minutes. Add salt and spices to taste
Transfer the cooked dish with the prepared sauce, and sprinkle with grated cheese.
